Honey:
Similar to washed coffees, honey processed coffees first have their outer layer of fruit removed. However, the resulting seeds are not subdequentlu rinsed. Rather, the sticky, sweet mucilage, from which honey processing derives its name, is left on the seeds. The mucilage ferments during the drying process and contributes complexity, richer mouthfeel, and a subtle sweetness to the final cup.
General Information:
Ninety Plus is a brand that has an unmatched track record of developing competition coffees and crowning champions on the international stage. With its roots in the
highlands of Southern Ethiopia, Ninety Plus has been actively expanding taste horizons since 2008. With its expansion to the highlands of Western Panama in 2010, Ninety Plus began to curate the most celebrated gesha (the Pinot Noir of coffee varieties) coffees in the world at the properties of The Barú Project and draws on deep experience in coffee's homeland of Ethiopia and its wild coffee forests to best integrate coffee ecologically (low density and high flavor). Ninety Plus continues to innovate and support competition-level coffees from the most select sections of The Barú Project. In addition to providing championship-winning coffees for the industry with leading ecological practices, Ninety Plus is developing access to deliver the best coffees in the world directly from farm to market .
