
RED & YELLOW CATUAI
Catuai is a genetic cross between two natural Arabica mutations of yellow Caturra and Mundo Novo.
The plant is highly productive compared to Bourbon, in part because of its small size, which allows plants to be closely spaced; it can be planted at nearly double the density. The plant’s shape allows for easier access to its cherries during harvesting. It is mainly characterized by great vigor and its low height; it is less compact than Caturra.
BLACK HONEY EXTENDED
The Black Honey process begins with handpicking ripe coffee cherries. After 24 hours of resting in bags, cherries are depulped leaving all the possible musilage on the coffee beans.
The beans are laced in thick mounts in African Beds and left to dry for more or less 25 days. This will allow for the coffee to go through an aerobic fermentation, and a slow drying phase. This helps highlight the sweet, fruity notes, and syrupy body. This meticulous process ensures a unique and exceptional cup of coffee.
